mmm, bacon
And not just any old bacon, but brown sugar habanero bacon.
I’m not a food blogger and I don’t pretend to be a foodie, but I do like to eat (c’mon! Lookit me, I ain’t hiding that fact) and I sure as hell loves me some bacon. The husband has been monkeying around with some weekend breakfast food type experiments and this one is SO GOOD that it needs to be shared.
Remember a few months back when our Nashville pals hooked us up with some home-grown, home-smoked and crushed habaneros? (Maybe you don’t remember, it could be I only put them up on flickr.) Anyway, they’re seriously potent and seriously delicious and we put them in almost everything.
Don’t they look pretty? (I know, not really pretty, but you get a sense of them. Magical heat.)
Preheat the oven to 400 and get yourself set up with a rack and some tinfoil underneath to catch the bacon grease.
In a wee bowl, mix up three parts brown sugar with one part smoked habaneros. (In this case The Husband used teaspoons)
Line up the thick cut bacon along the rack (no overlapping!) and massage that brown sugar habanero in gently on both sides.
Pop it in the oven for 16 (ish) minutes. (We actually do 8 minutes, and then turn the tray for another 8 minutes, but that’s ’cause our oven is heat spotty.)
Eat! Grow plump on the best bacon ever!







damnit… more good reasons to eat, drink and be merry.
ooh, that sounds pretty good. we have this maple habenero syprupy type sauce that someone gave us – might try and put that on bacon. also, is that cornbread with the bacon? good call.
